Customizations -->Leads --> industrycode --> Sort order (then Publish)----> Changes dropdown data but also unexpectedly changes values for already typed in leads?

Hi all,

using Microsoft CRM 365 Version: 1612 (8.2.1.176) (DB 8.2.1.176)

What would appear to be some pretty basic customization has evolved into a really strange mystery.

Why is itthat when I perform the following customization to the system:

----------

SALES --> SETTINGS --> CUSTOMIZATIONS --> CUSTOMIZE SYSTEM

...Components --> Entities --> Leads --> Fields --> industrycode

...[Under SETTINGS]: ADD one or more new industries, say "Carpenters" and "WiFi" --> Sort the values

...PUBLISH!

----------

... I DO get the desired result of the sort order (the dropdown menu under Leads) - BUT - all the already chosen industry-values for existing leads change to new values, apparently as a result of the invoked sort order - completely unintended and completely useless (say, if I had 100 existing Lead entries of "Doctors" these would, as a result of the invoked sort order, hold a new value of fx "Musicians"). Direct data-damage to all existing Leads!

Is there a different way to handle this customization "correctly"? How do I avoid this extremely disturbing and outright data-damaging behaviour?
